6 Months Barrel Fermented- Judean Hills
Our Reserve Chardonnay is produced using only carefully selected hand picked Chardonnay grapes in our vineyards in the Jerusalem corridor. At the onset of fermentation approximately one third is separated to complete fermentation in new oak barrels. This portion remains in the barrels for 6 months with stirring before being blended with the balance of the wine that is tank fermented at low temperatures. The resulting wine is an elegant, complex blend of the buttery character of the barrel fermentation and the clean crisp freshness of mountain grown Chardonnay. Full body, flavors of oak and fruit abound.
