The wine is produced from 100% Pinot Noir grapes. The source of the grapes is the Jerusalem Hills. The grapes were squeezed and soaked with the skins for several hours, the color of the wine is a very light pink .
Second fermentation was in the bottle and aged for a year on its lees, after which the remuage (ridding) phase began which was repeated every three days for three months to reach a thorough clarity of the wine .
At the end of this stage, a disgorging procedure was performed – freezing the neck of the bottle at minus 30 degrees, removing the yeast and replacing the temporary cork with a cork .
A long, complex and precise process; a very personal and dedicated passion to each bottle . This is the first vintage of the Matar Winery’s sparkling wine.
