Castel Petit Castel ’19
50% Cabernet Sauvignon, 45% Merlot and 5% Petit Verdot.-Domaine du Castel is an estate west of Jerusalem at an altitude of 24 ft. The vineyards are planted at a density of 67 vines per hectare and produce very small yields. The grapes are handpicked and after fermentation the wine was aged 16 months in French oak barrels.

The complex, rich Yarden Cabernet Sauvignon layers ripe berry, cherry and plum fruit notes with spice, earth, toast and opulent oak. The sumptuous, intense flavor lingers on and on. While immediately pleasurable, Yarden Cabernet Sauvignon will continue to improve for many years and will age elegantly for ten to fifteen years from the vintage. We like to pull out a bottle of Yarden Cabernet when hosting old, good friends for a festive meal. Drink with a good beef dish, such as roasted prime rib, served with pan juices mixed with a bit of reduced Cabernet Sauvignon. A roasted tenderloin stuffed with mixed wild mushrooms would be another great option.
