Flam Camellia undergoes a gentle process that keeps the taste of the fruit at the center, but also adds another dimension of the wood and yeast aging. The fine balance presents a wine that despite the respite in French oak barrels manages to maintain the freshness and elegant style characteristic of the Flam wine family. The process began with a nightly grape harvest and meticulous selection, after which the grapes were transferred in whole clusters for gentle juice extraction, fermentation, and aging sur lie in French oak barrels for seven months. The result is a white wine from the Judean Hills produced from 90% Chardonnay grapes and 10% Sauvignon Blanc.
About the vineyard – the Mata vineyard in the Judea Hills is planted on a sloped valley from east to west that serves as a type of trough. Its height in the east is 700 meters above sea level and at its bottom in the west is 600 meters. The chardonnay plots are planted in the valley, and enjoy the nightly chill and fogs that embrace it until the late morning hours. It is planted in the red color of the terra rossa earth typical of the Judea Hills which is created by the high content of iron oxides and organic matter. It has a low pH and high drainage capabilities, which affects the quality of the vines and the character of the fruit.
