Judean Hills...Whole Cluster fermentation expresses an old and venerable winemaking technique, before the introduction of destemming equipment, where the grapes were fermented whole, with their stems. Grapes sourced from a single vineyard in the Judean Hills, fermented with their own stems for 3 weeks, then pressed gently and continued to age in French oak barrels for 15 months. Before bottling the wine was coarsely filtered, exhibiting a wine with minimal intervention- an authentic representation of variety, terroir and ancient winemaking technique.
