White wines are flashed differently than reds. We pressed the grapes from this outstanding single vineyard in Lodi, CA and then put the juice through the flash détente. Then we barreled down the juice and fermented it the same way we ferment our non-mevushal Lavan Chardonnay. We stir the wine on its lees and allow it to develop a rich, ripe fruitiness, redolent of pear, apple and cinnamon. With its flash process, the wine is ready for bottling well in advance of Lavan Chardonnay.
