The 2018 Yarden Blanc de Blancs presents delightful fruit aromas of lemon, pear, and green apple, accompanied by hints of floral and mineral notes on a nuanced background of toasted baguette. Delicate yet complex, this festive sparkling wine displays fine bubbles and crisp acidity. The sparkling wine is produced strictly according to the traditional method, including the pressing of whole clusters and secondary fermentation in the bottle. Blanc de Blancs will age elegantly for up to ten years from vintage. Enjoy the wine by itself as an aperitif, or serve it with assorted tapas yellowtail sashimi, or
goose liver torchon served with a bit of coarse sea salt and aged balsamic vinegar.

THE VINTAGE
2018 was a relatively early and short vintage. A somewhat warm winter and spring with average rainfall resulted in an early season. After beginning about 10 days early on July 31, the deluge came in weeks five and six, with 34% of the total coming in those two weeks alone. While we typically harvest about 30% of our
fruit in October, in 2018 only 11% of the grapes remained on October 1, and we concluded the harvest on the 15th. Our beautiful summer weather and relatively
